I was dubious about this one and spent some time looking around online to see what others were pairing this one with and the most intriguing was having them as regular breakfast pancakes with maple syrup…
One batch made a rather nice stack of pancakes and I can understand why Dorie has us using whole kernels of corn instead of cornmeal – which many Portugese recipes call for, they would be more gritty tasting the other way I imagine and these were really smooth.

I used the magic bullet for this job… it was just large enough for one batch!
They fried up very nicely and I imagine since it is made of corn instead of just flour, it didn’t burn as quickly as my usual pancakes which meant no “first pancake rule!”
Mei tried them and immediately spit it out, I wasn’t too much a fan – possibly because I used a can of Summer Sweet corn and with the maple syrup, it was quite a bit sweeter than I would have liked in a corn pancake. It was a strange and not very pleasant taste in the end but my husband like them ok and ate the whole stack!

I’m very much looking forward to all of the July recipes but the first … ginger and this pregnancy don’t really jive, but it sounds simple enough! I’m looking for a great lunch or something to pair it with!
