Lately I have been craving biscuits.

You know the ones.

They are big, round, flaky and full of buttery goodness.

Sometimes, I would go through the drive through at KFC JUST for the biscuits to get a quick biscuit fix in.

I wasn’t much of a fan of anything else on their menu but their biscuits??? OMG, sometimes the perfect dinner. Just the biscuits with plenty of butter and honey for slathering and dipping!

You know how Pinterest has gone viral lately? It seems to be the place a lot of people are going for ideas for dinner and parties and all sorts of things. I’m just as guilty, having plenty of boards and spending LOTS of time pinning things left and right and sharing my finds with anyone who is interested in Facebook or Pinterest-land. That’s where I found this biscuit recipe!

It comes from a book called Southern Biscuits by Nathalie Dupree and Cynthia Graubart and consists of only four ingredients!

It’s a quick one to whip up in your food processor, but due to the stickiness of the dough, it has to be chilled twice before baking. Therefore, it’s a good one to whip up the night before or after breakfast to be baked for dinner. But then if you have decided that all you are going to make for dinner is a whole bunch of biscuits, then this is a perfect recipe!!

The addition of cream cheese makes them extra moist and tasty and is certainly something best paired with spicier meals or those with plenty of sauce that will instantly be turned into a very creamy tasting sauce with the addition of these biscuits!

Needless to say, Mei and I munched on biscuits – dipping them in honey, since I went ahead and brushed the tops with melted butter before baking, and enjoyed our dinner to the fullest! Even the husband unit enjoyed a few biscuits when he got home from work, although he thought they tasted a bit salty at first, changing his mind when he had them again for breakfast.

In the end, it’s another great biscuit recipe to add to the stack of biscuit recipes in my arsenal and certainly a unique one!
