Continuing on with our Cinco de Mayo Taco Week, I present this salsa!
It was a complete HIT for our taco game night and was especially appreciated by those of us that likes spicy and hot foods and it was a perfect accompaniment for our fish tacos as well!

Also, these are great with any freshly picked tomatillos which are not only very easy to grow but for a tomatillo rookie like me, a great way to use up the abundance of tomatillos that I managed to grow!

Not the best light, but a super delicious salsa!
You can dip your chips in them, spoon it into tacos, use it as a topping for any burrito, enchilada or wrap! Either way, if you find that you are unsure about tomatillos or don’t eat them often, try this salsa – it will change your view on tomatillos! Just be sure to wash your hands thoroughly after handling them as they can be quite sticky and slimy as you cut them.

Ingredients:
Blend the tomatillos first then add all the other ingredients until smooth.
Taste for additional salt and chile and blend again, chill and serve cold.
