This French Fridays post is on Nicoise Salad.
Or in my case, just Salad a la Nicoise. I could not track down any Nicoise olives.
Zip.
Zero.
Nada.
But have no fear! I wasn’t going to let that stand in our way!
The anticipation of having a salad for dinner like this was the perfect way to start our weekend. It is light, in appearance, filling upon consumption and has all sorts of stuff we love on it! How could you go wrong?
The only thing missing from the salad, as you may have noticed in the photo (besides the Nicoise olives) is the tuna. I actually forgot to put it on there.
They are actually sitting on my counter, next to some large, black olives that I had made the effort to open and prep, but never made it on the salad. My husband wandered into the kitchen part way through dinner for some more “infused water” – which for him means an aluminium can with hops & barley flavored water, and asked me what I had intended to do with the olives and tuna?
SHOOT!!!
We wound up adding them to our salads when the salads were half gone, and adding a couple more tablespoons of that fantastic vinaigrette (which we have made many times) and enjoying the salad down to the last leaf of that dreaded rocket.
How did I manage to pick the ONLY mix of salad leaves that was rocket heavy? I had intended to grab one with baby spinach and pea shoots mixture instead but in my haste, I managed to grab the only lettuce variety that I really don’t care for. Rocket.
Man, oh man!
But the meal was great and the girls enjoyed their de-constructed salad a la Nicoise along with us, eating the olives like candy long after dinner was over. This is certainly a make-again. Potatoes on a leafy, green salad, whodda thunk it?
P.S. My hubby has been making fun of my infused waters for the past few weeks, since I have been making one with mint, strawberries and lemons for a little over a week… he thinks it’s NUTS… and then it’s especially funny because the girls love the water infusions that they insist on having “stuff” in their water too – and usually that “stuff” is consumed before the water.
P.P. S. I am looking forward to making this next spring with asaparagus & hard boiled eggs that are seared in bacon renderings… kind of a marriage of the Asparagus and Egg Salad & the Salad Nicoise. Doesn’t that sound amazing??
