So what are speculoos you ask?? The absolutely most thrilling cookie since the gingersnap!
In fact, MOVE OVER GINGERSNAP!
There is a new cookie in town!
These made my hands smell good and the oven smell great, and fill the kitchen with the best aroma of Christmas time and fall… it was perfect. Absolutely perfect!
This was one of the French Fridays with Dorie recipes that I missed before I joined the group, so it was great to have a chance to make them – not to mention a few were necessary for the chicken dish for tomorrow’s FFwD recipe!
My original plan was to share them with my friends, but one batch is just enough for my morning, afternoon, evening and midnight cups of tea! … Pretty much, my friends (that know about this and are within driving distance) should get in their cars and strong-arm their way into my house to taste some!
Ok, you and I both know I would invite you in willingly, but you might not be able to find the speculoos! … hehehe! And I’m sure I would look like the cat that ate the canary!
The dough sits in the fridge so that the spices can really permeate the dough and make it even more delicious. I have big plans to make these into Christmas goodies to pass out… these are going to be like the cheesy bunnies, I’m going to create some “crack” addicts outta my friends for these and the cheesy bunnies!
While reading about speculoos, I saw that these are traditionally stamped and I’m going to be doing this next time, it is so awesome looking when its baked and just makes it more irresistible!! The dough becomes very soft, very quickly once you have to ball up the scraps to roll out again to stamp out more cookies, so make the most of your surface area and then roll out the dough and stick it in the fridge to cool while one batch is in the oven, then they hold their shapes really well and are much easier to handle.
I have been struggling to find a gingersnap that is thin and crispy, but just a tad chewy and savory like the speculoos or speculaas, if you prefer, and this one hit the nail on the head! Thank you Dorie for the answer to my “prayers!”
Even Mei and Patella got to share some of these with me. Patella rarely sits underfoot for a bite of something she likes, so she must have LOVED these! And little Miss Mei likes her apple (baby) biscotti better I think, although she did suck the life out of a bit of the cookie before letting it fall out of her mouth, it might have been a bit hard for her. The apple biscotti is designed to melt unlike the speculoo. But she had some interesting faces while she considered the speculoo!
