Hello Doristas! Long time no see! I have been sick, sick, got pink eye, and got sicker … passing it back and forth between Mei and I, it has been a rough past six weeks. So now that we are better I can’t wait to get back on schedule with the Dorie recipes! I have missed the group, thinking of you guys on Fridays and trying to keep up with all your posts! I’m planning a night to catch up on all the recipes I have missed since I got pregnant, so that should be an interesting French Friday coming up… not sure when, but soon!
I’m glad that I’m getting back in the game with this chicken in a pot dish! I love the idea of one pot meals and putting a whole chicken in a pot? It’s brilliant! This French Friday dish was a bit hard for me to fit in this week’s crazy schedule because right after the sushi party, I was getting ready for Mei’s first birthday party! We held a little gathering for her on Friday night and so we made the chicken for Thursday night since it was a low-key dish to put together and could cook while we were busy preparing other foods for her party.
There is also something else exciting! My husband’s cousin is studying abroad in London as a part of her college degree and has been staying with us on and off since Christmas so she was able to have her first Dorie dinner! And the consensus? Easy to whip together, we could do plenty of other things while waiting for the chicken to brown and cook through, and the sauce was TO DIE FOR!!! We all agreed that the sauce was plenty delicious, and serving it with brown rice was the perfect accompaniment to the chicken, sauce and veggies! Although we did substitute in brussel sprouts for the onions since we (for the first time ever!) didn’t have any onions in the house. Oh and one thing? The chicken didnt brown! What did I do wrong? I read and re-read the recipe and I didn’t see it asking for us to rub the chicken with olive oil or butter or the like and while it crisped a bit and browned ever so slightly, I didn’t manage to get a real nice golden brown color on the chicken. Other than that? The chicken was pretty flavorful and I could see making the chicken again this way, but with a different array of veggies each time to keep it interesting and making MUCH more of the sauce! Our cousin declared that the sauce would make her eat any vegetable if she could have this sauce all the time! In fact, this was the first time she had had brussel sprouts and decided they were pretty tasty!
