Let’s just say that my energy was pretty low after last nights dinner so I didn’t get to making the quartre-quarts until Mei’s first nap of the day but luckily this cake comes together very quickly! I managed to whip the whites and dust the pan without waking Mei, which was rather nerve-racking, and it went into the oven while I had lunch and once it came out???
DELICIOUS!
It smelled wonderful and I was very excited to share this with my husband after dinner tonight. We picked up some really good looking, plump blueberries at the store yesterday and some cream, so I was extra excited to get back from our day today to sit down and enjoy this cake!
After a dinner of pizza – it was just what I was craving, although not at all French, I got the whipped cream whipped, dropped a handful of blueberries on top of the springy, brown sugar glazed cake and enjoyed bite after bite until the first serving was gone…
I can’t confirm or deny that we had a second serving at all, but I can say this, I will be a bit more heavy handed with the brown sugar next time or use sugar in the raw because I want the glaze to cover the entire surface of the cake. And I think I might buy some cute mini bundts or other pan to make these again since these would be perfect for tea or a small, but filling dessert after dinner with my friends! And some of my Dorista friends have tempted me to buy some cute mini pans after seeing their posts this morning! *wink*

Thanks!! It was so great with the berries! Yay! I will certainly be making this cake again and since its so quick to put together, it can be a last minute dessert addition or afternoon tea snack or evening something for breakfast!! π

I used to plan my life around nap time, I wish I still had something like nap time where the house becomes quiet and I can get things done, but life gets busier all the time. Your cake is lovely and with blueberries (and the blueberries you used are great looking) and whipped cream…well that sounds heavenly. I like that you decorated a slice well.

LOL! It makes my husband nuts to watch me decorate special plates just for the blog or put my dinner on hold just so I can make a nice looking plate for pictures, so now he just gives me a hard time, LOL! π

I’m thinking about trying raw sugar next time too because mine clumped up a bit as well. Oh well, still darn tasty.
Also, it sounds like you and I are having similar problems lately commenting on blogger blogs. I did a little googling today and found a work around for most (sadly not all) of the blogs. When you click on the OpenID drop down box, instead of selecting WordPress, select Name/URL. You can type in either your real name or blog name in the Name field and then copy your blog’s URL into the second field and then click Post. So far I have not had a single error doing it this way. The only problem is that not all blogs enable this option.

Yes, I think raw sugar would be great, although I really enjoyed the rogue bits of brown sugar clumps that sank to various points in the cake π

So dont think I’m ignoring your blog, I have tried so many times to leave the Blogger.com and Blogspot bloggers comments and its just being a pain for so many of us right now… ugh. These blueberries are from Ecuador and they taste like summer! Who would have thunk it in the middle of January?

yay! no problem! I have that problem all of the time, or I have a bunch of egg whites and I pour those into a ziploc baggie and pop them in the freezer (marked with how many there are) and then I can make coconut macaroons or anything that requires just whites π
